spinach, carrot and mediterranean salads
hello!
Haven't used this for so, so long. This update's a bit boring too, promise to put more funstuff up asap.
Anyway, made loads of lush salads for Mum and I this evening and wanted to remember!
Spinach Salad
loads of spinach
handful fresh basil leaves
tbsp or so of cashew nuts
1/2 tub cherry tomatoes
1/2 tub button mushrooms
1 tsp olive oil
half tsp tomato puree
1 tsp cider vinegar
1 tsp apple juice concentrate (or something sweet)
Preheat the oven to gas mark 6, erm, if I had an electric one I'd guess and do 180 degrees c or something... then spread the chopped cashew nuts on a baking tray and toast in the oven til brown. Once done, set aside to cool. Meanwhile, chop up a load of spinach and basil leaves (but much more of the former than the latter), add chopped cherry tomatoes, and chopped raw mushrooms. Mix up vinegar, apple juice concentrate, olive oil and tomato puree for the dressing, then toss everything together.
Carrot Salad
2 carrots (grated)
1 apple (grated)
sprinkling sunflower seeds
2 small celery sticks, chopped
few radishes, chopped finely
25 ml lemon juice
25 ml apple juice concentrate
50 ml pineapple juice
Combine juices for dressing and set aside. Combine all other ingredients in a bowl then add dressing.
Mediterranean Salad
100g couscous
few sundried tomatoes, chopped into tiny pieces
10 olives, chopped
1/2 red pepper, 1/2 yellow, chopped
some chopped cucumber
1tsp olive oil
1tsp soy or tamari sauce
1tsp cider vinegar
Boil kettle, pour hot water over tomatoes. Then do the same for couscous (in a separate bowl) er... to be honest I guess at quantities, but it might be better to read the packet. Chop veggies while latter cooks/cools and former plump up. Once everything's sorted, combine the lot, plus oil, vinegar, and soy, then mix thoroughly.
