carrot and tomato soup with basil and coriander
Rar, I wanted a quick, cheap, tasty dinner. Carrots and onion = cheap. I wanted to make carrot and coriander soup, but the shop had run out of the latter and I had dried but kind of wanted fresh, as I think fresh is what makes it really!
They did have basil though, so I decided to combine the two classic soup combinations and make tomato and carrot soup with basil and coriander.
Ingredients:
3 carrots, grated
1 onion, chopped
1/2 tin tomatoes
fresh basil (obviously that's the pricey bit, the rest of it's less than a quid. It's not bad price this time of year though, and you could use dried as it's cheaper, but it doesn't give the lift normal basil does).
1 tbsp ground coriander.
1 tsp stock powder
seasonings
1) Add onion to saucepan, cover in a couple of inches of water, stir in stock powder, boil. Meanwhile grate the carrots and add to the pan.
2) Grind coriander seeds up, then add 1tbsp. Add to the pan.
3) Add tomatoes.
4) Wash and chop a load of basil. Add to the pan. Stir a bit, add seasonings (I used a bit of garlic puree and pepper) and simmer until cooked (the flavours will have infused in about ten minutes).
It's really good! Loads of flavour and really summery. Some people might find the flavours a bit strong, so you could always lessen the coriander and basil quantities.
