spicy bean burgers
hehe, ok I know that sounds like a totally generic title, but if I do make a cookzine I want to start off with basic recipes then go on to more interesting variations. I wanted a basic bean burger recipe, so decided to invent one the other night.
ingredients
2 carrots (peeled and grated)
1 tin kidney beans (drained and rinsed)
1/2 red onion (chopped)
1 pepper (chopped)
4 tbsp gram flour (just normal will do though)
Either 1 fresh chili (chopped and deseeded) or a few bits of those sliced jalapenos you get in jars
1tsp dried ground coriander
1tsp dried ground cumin (these are best if you do them yourselves)
pinch sugar/splash of apple juice concentrate
1)Sautee the onion and chili in a little oil, when they begin go get translucent and look vaguely cooked, reduce the heat and add the spices, carrot, kidney beans and pepper.
2) Stir and continue to cook on a low heat for five minutes or so.
3) Add the sweetener (whichever you choose to use, I like the apple juice concentrate).
4) Remove pan from heat then transfer most of the mixture to a food processor and blend up (leave a little in the pan for varied texture) then put blended stuff back into the pan and stir into the not blended stuff.
5) Add the flour and stir together. If it's too sticky add more flour, etc. It should be the right consistency so you can make it into patties in your hands (makes about four).
6) Cook by either grilling or shallow frying. Grilling's obviously better for you, but frying gives you that 'crispy on the outside' effect.
Serve with salsa and salad.
I can't remember if I stuck more vegetables in the mix... you totally could do though.
