muffins!
Arg! I got invited to dinner the other day so decided to bring cupcakes, only Sainsbury's didn't have any cake cases so I popped into Lakeland to grab some..and came home with a muffin tin. Arg. A fecking muffin tin. All well and good, but should I really be wasting money on stuff like that? Answer = no, no I shouldn't. I'm such an idiot sometimes.

Anyway: I was struck with inspiration and decided to invent apple and blackberry crumble cupcakes (to be seasonal) only there weren't any blackberries to be found. So they were apple and raspberry crumble instead.

I just used the vanilla cake recipe from How It All Vegan (cheers Nicola!) made a few substitutions and added detritus to it.


ingredients

1 1/2 cups flour (SR)
2tsp baking powder
1/4 tsp salt
3/4 cup dark brown sugar
3/4 cup rice milk
2 tsp vanilla extract
1/4 cup sunflower oil
egg replacer to equal one egg (I use this random powder stuff, but you could use anything really!)

anyway, I ended up making two types of muffins, the crumble ones and some marbled double chocolate ones.

Crumble muffins:
Additional ingredients = 1 chopped cooking apple, chopped raspberries (half a punnet)
1) Preheat oven to 180 degrees
2) Sieve flour, salt, baking powder, egg replace powder together, stir in sugar then add wet ingredients (milk, oil, vanilla) plus an extra 80ml (I think) water to react with egg replacer.
3) Stir in chopped fruit.
4) Spoon into muffin cases.
5) For the crumble topping mix some flour and sugar together and add a little margarine, rub together until it looks crumbly and sprinkle it on the top. Mine was too floury. Needs to be more sugary than floury.
6) Bake for a bit...say 20 minutes. Erm, you'd better check this, as I can't remember.

Chocolate muffins
Additional ingredients = extra cocoa, 1 dark chocolate bar, chopped.
Basically you make the recipe in the same way, but divide everything into two bowls. Make one bowl chocolaty by adding some cocoa powder to it, then add the chopped up chocolate bar to the plain bowl. If you put a dollop of each mixture into all the cake cases, they'll make a marbled effect when they're cooking.
